Beef Cobbler

I’m sharing a tasty meal for you to enjoy. It’s relatively quick and easy to make, so perfect for a midweek meal, and will feed a family when combined with fresh vegetables.

10ml vegetable oil

1 medium onion, chopped

500g minced beef

1 medium carrot, chopped

1 beef stock cube

1 Knorr herb flavour pot

15ml Bisto gravy powder

175g self raising flour

15ml cornflour

175g self raising flour

0.25ml Colemans mustard powder

Pinch salt

25g butter, cubed

25g Parmesan cheese, grated

50g Cheddar cheese, grated

2 eggs, beaten

Oven temperature: 200°C

1. In a saucepan, heat the oil gently and add the onion. Cook until starting to soften, but not brown.

2. Add the minced beef and cook until browned.

3. Add the chopped carrot and stir through.

4. Dissolve the stock cube in 100ml boiling water and add to the saucepan along with the Knorr flavour pot.

5. Bring to the boil, then reduce the heat and cook for 15 minutes until the carrots are softened.

6. To make the cobbler (scone) topping, in a large bowl place the flour and mustard powder and stir together to combine.

7. Add the cubed butter and, using your fingers, rub the butter into the flour until it resembles breadcrumbs.

8. Stir in the cheeses.

9. Beat the eggs and add approx 2/3 of these to the flour and butter mixture. Combine with a fork until it starts to bind together, then knead gently until it forms a ball, adding more egg as required.

10. Turn the cobbler mix out onto a floured surface and gently roll out to a thickness of about 1cm.

11. Using a 5cm circular cutter, cut out as many rounds as you able to get from the mixture, re-forming and rolling as required.  Set aside briefly whilst you thicken the minced beef.

12. Mix the Bisto and cornflour together and add cold water to mix to a runny paste, the consistency of single cream.

13. Increase the heat under the mince and return to the boil.

14. Add the Bisto and cornflour mixture and stir constantly until thickened. It is essential that you continue to stir this whilst it thickens or you will get a lumpy gravy!

15. Season to taste.

16. Transfer the mince to a heatproof dish and top with the cobbler rounds, overlapping as required.

17. Brush the top of the cobblers with the remaining beaten egg and transfer the dish to the oven.

18. Bake for 20 minutes, until the cobblers are browned.

19. Serve with plenty of freshly steamed vegetables.

Lamb steaks with Friars Farm Middle Eastern Marmalade and Potatoes

Being based in Northamptonshire, Friars Farm, one of the local producers of jams, chutneys and sauces approached me and asked if I’d like to sample some of their products.  Of course being a foodie, and wanting to support local producers, I said yes and I’m thoroughly glad I did too!  They have a fab range of products; the first of which, their Middle Eastern Marmalade, I’m reviewing here. I also used this in a batch of flapjacks that I made, but for that recipe you’ll have to wait a short while…!
1 Red onion
4 Lamb leg steaks
4 tsp Friars Farm Middle Eastern Marmalade
Freshly ground black pepper
1 Sweet potato, peeled
2 Large potatoes, washed but not peeled
1 Knorr chicken stock pot, dissolved in:
280ml Boiling water
145ml Orange juice
2 tsp Mint sauce concentrate
1 Knorr rich beef gravy pot
100ml Double Cream
1. Heat the oven to 150℃.
2. Lay the lamb leg steaks in a single layer on the bottom of a rectangular dish.
3. Spread 1 teaspoon of the Friars Farm Middle Eastern Marmalade over each of the lamb steaks.
4. Season with ground black pepper.
5. Slice the sweet potatoes on setting 3 of a Oxo Hand Held Mandoline and layer on top of the lamb steaks.
6. Slice the potatoes on setting 3 of the mandoline then layer these over the sweet potato and lamb.
7. Mix the chicken stock, orange juice and mint sauce concentrate together.
8. Gently pour this over the lamb and potatoes.
9. Cover the dish with foil.  I run my finger gently around the inside of the dish after covering it which creates a low point, thereby enabling the evaporated juices to drip back down into the dish and retaining the moisture.

10. Place in the centre of the oven and cook for 3 hours.

11.  When cooked, remove from the oven and gently drain the juices into a saucepan.
12. Re-cover and keep warm whilst you make the gravy.

13. Add the beef gravy pot to the saucepan and quickly bring to the boil, whisking to distribute the gravy pot.
14. Add the double cream and gently heat through.
15. Serve a lamb steak with the potato topping on a bed of peas with the gravy poured on top.

Chicken a la King

An old recipe I copied down from a magazine in the late 1980’s when I first got married was for the very ‘exotic’ Chicken a la King.  We thought we were so sophisticated when we sat down to our meal in our first house and it’s something we’ve enjoyed eating every so often since then.  My apologies for not being able to give credit to the original recipe writer, but it’s been with me for over 25 years on a scrappy piece of paper.  I’ve changed it slightly as I really don’t like mushrooms, so they’re no longer in my own version of this recipe, but please feel free to ‘add the fungus’ if you so wish!

4 Chicken breasts, skinned
40g Butter
10ml Oil
1 Onion, diced
100g Mushroom, sliced (not on my plate!)
2tbs Cornflour
60ml cold Water
20ml Tomato purée
Black Pepper to taste
250ml Chicken stock
1tsp dried Basil
2 Tomatoes, skinned & sliced
150ml Single cream
1/2 Green Pepper, sliced
1/2 Red Pepper, sliced

1. Heat the oven to 180C.
2. Heat the butter & oil in a frying pan.
3. Fry the chicken on both sides until golden.
4. Remove the chicken breasts to a casserole dish and set to one side.
5. Fry the onions and mushrooms (if using) until softened, but not coloured.
6. Mix the cornflour and water together until smooth.
7. To the pan, add the tomato purée, black pepper, stock and cornflour/water and bring to the boil, continuously stirring until thickened, then reduce the heat to a simmer.
8. Add the basil, sliced tomatoes, cream and sliced peppers and stir through.
9. Pour the sauce over the chicken breasts and cover with the lid.

10. Place your casserole dish in the oven and cook for 30 minutes.

 Serve with roasted potato and sweet potato wedges with broccoli and cauliflower.

Tomato Sauce Pizza Tipping

It’s incredibly easy to make your own tomato sauce pizza topping and then, using any leftover, stir it into your pasta or spruce it up with mince to made a base for your bolognese sauce to go with your spaghetti.  This is how easy it is:

45ml Extra Virgin Olive Oil
1 large Onion, finely chopped
2 cloves Garlic, crushed
1.25ml (¼tsp) Chilli flakes
2 x400g tins of chopped Tomatoes
2.5ml (½tsp) Sugar
Splash red wine (if you wouldn’t drink it, don’t cook with it!)
Basil stalks, chopped

1. In a large saucepan, heat your oil and cook your onions for 10 minutes until transparent and soft.
2. Add the crushed garlic and cook for 3-5 minutes until cooked, but not brown.
3. Add the chilli flakes, chopped tomatoes, sugar and wine.
4. Bring to the boil, reduce to a simmer then taste and season as required.
5. Add the basil stalks.
6. Cover and simmer for 1 hour until thick.
7. Blitz until smooth.

*Use to top your pizza dough, or transfer into a clean Kilner jar and refrigerate for up to 3 days.
*To make your bolognese sauce, brown mince, and onion and garlic then stir through the sauce and heat until piping hot.
