Home Made Jerk Seasoning

If you read my post on Saturday, you’ll see that we grew our own chillies this year, dried them and made them in to a hot & fiery chilli powder. Using a small amount of that powder, I made my own Jamaican/Cajun jerk seasoning.  WOW!!! what a difference to the shop bought, commercially available stuff.  It’s got punch and power and a lot of heat.  I’m glad I didn’t put loads of powder in to it!

  • 5ml Chilli powder
  • 3cm Fresh ginger
  • 4 Garlic cloves
  • 5ml Ground cinnamon
  • 5ml Ground coriander
  • 2.5ml Ground nutmeg
  • 15ml Soft brown sugar
  • 2.5ml Dried Thyme
  • 1 lime, zest and juice
  • 30ml Dark rum
  • 30ml Rapeseed oil
  1. Place all the ingredients above in a spice mill.

  1. Blitz together until fully combined and smooth.

  1. Pour this mixture into a medium sized bowl.
  2. Score your chicken breasts and toss them into the spice mixture, making sure that it penetrates the flesh to infuse the seasoning into the meat.

  1. Cover the bowl with clingfilm and refrigerate for a couple of hours, until ready to cook.
  2. When ready to cook the chicken, place the breasts into a hot pan, with a little rapeseed oil and cook on both sides until the chicken is cooked.

  1. Serve with my pineapple salsa for a tasty dinner.

Review – Patak Chicken Tikka Masala

In a hurry?  No time to cook from scratch? Need a quick and tasty dinner cooked straight from the freezer?  Yes, sometimes we all do!

Although I’m not normally one to buy ready meals, sometimes we all have to make sure dinner is on the table quickly if we’re in a rush, and the other night was no exception. As I was late in from work, and rushing to get out the door again, it called for me to have a ‘quick on draw’ dinner.  Luckily, Patak’s had sent me one of their new range of frozen Chicken Tikka Masala ready meals to review so I could get this out of the freezer, into the microwave and on the table in a matter of only 10 minutes, which was hardly time to get changed and ready to go out again!

The packaging says it’s medium strength, however I personally think it was quite mild. The chicken was lean and stayed succulent in a generous portion of sauce and the pilau rice stayed in individual grains and not a gloopy lump of stodge. The smell was so tantalising that my husband appeared and miraculously managed to have a fork in his hand to dig in and share my dinner; the cheeky boy!

As the mother of a son at Uni, I think this would also make a perfect freezer filler for him during study time when the books are calling and there is less time for him to cook his own curry from scratch.

At 550 Calories per pack, it’s possibly a little higher than I would normally eat, however the saturated fat at 3.4g made it a less of a guilt and more of a pleasure and much more of reasonable calorific intake than a take away curry would.  I’d certainly buy a couple of these as quick stand by dinners for my freezer.

Stoves Winter Recipe Creation

As a member of the BBC Good Food Show Blogger Community, and having worked on a previous Stoves UK recipe re-creation, I was again invited to take part and cook up a storm in my kitchen, with inspiration received from the live demonstrations that the chefs give at the shows.  I sat in the audience and watched the very talented Phil Vickery cook eels, but I’m not brave enough to try those slippery little suckers (I used to go fishing with my husband, so know their habitat and slippery/slimy persona). Instead I chose to do two recipes which can both be found on the Stoves Recipe website: (I have not re-published the recipes here; merely the method of preparation, as neither recipe is mine, but I have provided the links to them which you can find on the Stoves website).

Gusto’s pan-fried Chicken Breast with Creamed Leeks and Butter-fried Gnocchi

Following the recipe (link above) and having sealed my chicken breasts until golden, before placing them in the oven to cook, I then sliced my shallots and crushed my garlic, sweating them off until softened but not coloured.  I added my sliced leeks to the pan and continued to sweat the vegetables before adding the cream, reducing the mixture and stirring through the oregano and mascarpone.
imageTo my pan of boiling water, I dropped in my gnocchi, removing them when they floated to the top to signify they were cooked.  They were then added to a pan of olive oil and butter and cooked until golden.

The chicken breasts are served on a bed of the creamed leeks, surrounded by a tumbling of the gnocchi and gives you a dinner worth of a fully tummy and an empty plate.

Well, I say a full tummy, but you’re never too full for a delicous dessert, are you?  So, for my dessert I chose to make A Glug of Oil’s Limoncello Cheesecake using a bottle of Pallini Limoncello.

I lined my springform tin with baking parchment (it makes it easier to remove it from the tin to serve).  I crushed my Oaties biscuits (Tesco’s own Hob Nobs) and melted my butter, then mixed them both together, pressing this into the base of my tin, before placing it in the fridge to cool.

The mascarpone, lemon curd and lemon zest, along with the lemon juice and Limoncello (I added 5tbs, not the 2tbs that are recommended in the recipe), all went into a bowl and were beaten together until thoroughly combined and smooth.  This was then poured over the chilled cheesecake base and placed back into the fridge to set overnight.

The lemon slices are candied in syrup for the decoration.

Remove your cheesecake from the tin to a serving plate and serve chilled.

Cooking with Stoves and Cyrus Todiwala

I watched a fantastic demo at the Summer 2015 BBC Good Food Show by Cyrus Todiwala who cooked his Chicken Tikka Kala Miri Masala on the Stoves UK stand. Stoves UK were the official appliance supplier to the BBC Good Food Show this year and hosted their own Live Cook Stage, where you could see the likes of Cyrus Todiwala, Brian Turner, Stacie Stewart and Hemsley & Hemsley demonstrate their recipes.

I love that Cyrus is an advocate of British food and champions his ingredients, were possible, from the British shores. He explained and demonstrated how to cook this traditional of dishes to the audience along with his recipe for Burmese Glass Noodle Salad and Chazaan.  As Stoves proudly produce their Range cookers, built in ovens and hobs as well as freestanding cookers in Merseyside in the UK (see here for further information), this was the perfect partnership.

In association with Stoves UK, I was asked to recreate Cyrus’ recipe at home, which I did.  I can honestly say that these two recipes partner perfectly (with more than a little heat!)  I found Cyrus’ recipes incredibly easy to follow and thoroughly recommend you to have a go yourself.

Prepare your ingredients:

Simply marinade your chicken the Tikka seasoning and set aside in the fridge for the flavours to infuse.

Lay on a tray and cook in the oven.

Prepare and cook the Burmese Glass Noodle Salad, then add the chicken tikka pieces on top.  I served mine with some soured cream to take the heat down a little bit and with a wedge of lime to squeeze over the top.
