Boiled Bitter Orange & Polenta Cake

For those who don’t like their cakes too sweet, but still love them full of flavour, then this one is definitely for you!  As it contains corn meal/polenta instead of flour, it’s also gluten free (ensure you use gluten free baking powder in this instance).  I glazed mine with an orange and Amaretto syrup.

This is an incredibly easy cake to make and can be prepared quickly and easily using a food processor.  I have a Kenwood MultiPro Sense food processor which also has a weighing scale built in, so this really is an easy, one bowl wonder of a cake to make!

Bitter Orange & Polenta Cake


Ingredients:
2 large oranges
250g demerara sugar
200g ground almonds
100g fine ground corn meal / dried polenta
6 large eggs
2tsp baking powder (see note above re: gluten free)
2tsp ground ginger
1tsp ground cinnamon

Orange & Amaretto Syrup:
75g caster sugar
60ml water
1 large orange, juice and zest
30ml Amaretto


Method:

  1. Wash any wax coating off the oranges.
  2. Place the oranges into a large saucepan and cover with cold water.
  3. Bring to the boil, cover and reduce to a simmer.
  4. Simmer for 1 hour until the oranges have softened.
  5. Remove the oranges from the water and set aside to cool.
  6. Preheat the oven to 170°C.
  7. Grease and line a 23cm/9″ springform cake tin.
  8. Cut the oranges into ¼ and remove the pips.

  1. Place the oranges (skin, pith and pulp) into a food processor with the sugar and blitz into a smooth paste.

  1. Add the almonds, corn meal/polenta, eggs, baking powder, ginger and cinnamon.

  1. Blitz together until combined.
  2. Pour the cake batter into your prepared tin.

  1. Bake for 60 minutes, until cooked in the centre.

  1. Cool the cake in the tin.
  2. Remove the cake from the tin when cold and place it on to a plate.
  3. For the glaze, add the sugar and water into a saucepan and heat gently, bringing it to the boil without stirring until the sugar has dissolved and the syrup has turned a golden brown.
  4. Add the orange juice, orange zest and amaretto and stir to fully combine.
  5. Bring back to the boil and boil gently until the syrup has reduced and become thickened.
  6. Poke small holes in the top of the cake to allow the syrup to soak through.
  7. Pour the syrup over the cake evenly and gently, allowing it to soak in.
  8. Serve the cake warm or cold with some clotted cream, ice cream, or cream.

Ragley Hall Game Fair with debbie&andrew’s Sausages

The third Ragley Hall Game Fair runs from 29th – 31st July in Alcester, Warwickshire. Here you’ll find a whole weekend of family fun to enjoy with over 900 exhibits including falconry, country crafts, guns, fishing, country fashion, food and drink and which is expected to attract more than 100,000 visitors to the event, you’re sure to enjoy an amazing day (or two) out.  Ragley Hall has a long lineage which dates back to 1680 and is one of the Midland’s most magnificent houses with an estate covering an area of 6,500 acres.

This year debbie&andrew’s will be cooking up their tasty wheat, gluten and dairy free sausages where you can sample their newest of recipes from Sweet Chilli or Curried Chicken and Mango sausages to their original 97% Harrogate pork sausages.   You’ll also have the chance to enter competitions and find out about their ‘bangers&cash’ micro sponsorship scheme, offering up to £1,000 to any community fundraisers that bring ‘A Real Taste of the Country’ to life!

The newest sausages in their range: Sweet Chilli has a spicy hint of heat delivered by chipotle chillies and juicy red bell peppers, perfectly balanced with a drop of blossom honey and a sprinkling of demerara sugar, whilst the Curried Chicken and Mango Sausage was the creation of a debbie&andrew’s fan and was selected from over 2,000 entries in the #MakeMySausage challenge to make a sausage from your favourite food.   Clearly the Coronation Chicken based recipe was a clear favourite! A blend of chicken breast, with a slight hint of curry and bits of sweet mango is the perfect combination (and I can personally vouch for it tasting really rather nice, too!)

Food Review – Nairn’s Oatcakes

What a lovely invitation I received – to attend The Ivy Club in London on behalf of Nairn’s Oatcakes for a Cocktails & Canapés evening.  Too exciting to turn down and already a fan of Nairn’s Oatcakes, I just had to say yes!

 

 

Nairn’s have been baking oatcakes for over 100 years, so they know a thing or two about producing a fab product! Their oats are sourced in their native Scotland which has the perfect climate for slowly and naturally ripening the grains used to make their products.  Produced in both sweet and savoury variations, rough and smooth in texture, with or without fruit or seeds, they provide the perfect snack or base to enjoy for breakfast, lunch, dinner or a snack.  Their products come in perfectly portioned, wrapped packs making them easy to slip into your bag or lunch box for freshness on the go.  The difficult part is which one to choose as your base and what tasty topping you’re going to pile it up with!
 

 

In addition to their Scottish grown oats for their general market oatcakes, they source certified gluten free oats from Wyoming from a family of coeliacs who know the importance of guaranteeing that the products grown are free from wheat.  This farming family is so passionate about their product that they walk their fields ensuring that no rogue grains contaminate the oats. Nairn’s also have a dedicated manufacturing facility in which they produce their gluten free range, thereby reducing the contamination risk even further.  Great news for every coeliac!
 

 

Oats contain the highest soluble fibre of all the grains making them excellent to fill you up and release their energy slowly. They’re wheat free and contain no added sugars, hydrogenated fats, artificial flavours or preservatives, making them a fabulous and healthy energy source. Great served with peanut butter, jam or fresh fruit for a sweet treat or with cheese, meats, hummus, salads or soups for a savoury feast that’s not only tasty, but is good for you too.  Oats are naturally low in GI which help keep the blood sugars and energy levels even, thereby reducing cravings and helping with weight loss.  
 
A perfect start to the day either at home of in the office is their gluten free porridge oats which old in handy, single portion pouches, or in a tub for extra convenience, they’ll ensure you’re not hungry until lunchtime.
 

 

I do buy Nairn’s Oatcakes ordinarily, but I’m even more of a fan of these now that I’ve had the opportunity to taste the entire range.
