Rosewater, Pistachio, Cranberry, Blueberry & White Chocolate Oat Cookies

Wow! That’s a mouthful of a recipe title for sure! However, it does tell you exactly what’s in the cookies I made, doesn’t it?

Inspired by the original recipe by the finalist of the Great British Bake Off, Holly Bell, which is incredibly versatile and can easily be altered, depending on your mood and fancy.  Last night, I decided to go a little Persian with some wonderfully fragrant Nielsen Massey Rosewater, some delicious green pistachios from Sainsbury’s, along with some cranberry & blueberry mix which I’d bought from Holland and Barratt and some creamy chunks of Callebeaut white chocolate.  The recipe made about 21 cookies (I forgot to count before we started eating them, still slightly warm from the oven, sorry!)

 

  • 250g Butter, room temperature
  • 150g Soft brown sugar
  • 1½tsp Nielsen Massey Rosewater
  • 150g Self Raising flour
  • 230g Quaker Porridge Oats
  • 100g Cranberry & Blueberry mix
  • 100g White chocolate chunks
  • 100g Pistachios, chopped

  1. Preheat your oven to 160ºC.
  2. Line your baking sheets with parchment paper (I used 4 baking sheets and baked them in pairs).
  3. Cream the butter and sugar, along with the rosewater until light and fluffy. (I was watching The Fall on BBC iPlayer as I was baking, can you tell?!)  It’s much easier to use a hand mixer when creaming your butter and sugar, and I use my Kenwood K-Mix one.

  1. Add in the flour and oats and stir to combine fully.
  2. Gently stir in the cranberries, blueberries, chocolate chunks and chopped pistachios.

  1. Take out plum sized balls (I used a level table spoon measure for my cookies).
  2. Place the cookies on to your baking tray and flatten them out roughly to about 1cm thick.  You need to leave about 2cm between them to allow them to spread a little.

  1. Bake for 16 minutes.
  2. The cookies will still be soft when you remove them from the oven, so allow them to cool on the baking sheet for about 5 minutes.

  1. Remove the cookies to a cooling tray and leave until cold.
  2. Store in an airtight container, but you won’t be able to resist them for too long!

This recipe uses Nielsen Massey rosewater which had previously been sent to me as a gift, along with other vanillas and flavourings.

Cranberry Sauce

‘Tis the season to be jolly, as they say.  ‘Tis also the season to make your own simple additions for you Christmas dinner and there’s nothing more simple then your own, homemade, cranberry sauce, using only 4 ingredients.

150g Soft brown sugar
45ml Ruby port
Grated zest and juice of one orange
300g Cranberries
1. Tip all of your ingredients into a saucepan, bring to the boil and simmer for 15-20 minutes until thick.
2. Taste (be warned, it’s VERY hot, so allow it to cool on the spoon for a few seconds before you try it) and adjust the sugar content to your own personal taste.
3. Pour into sterilised jars, seal and allow to cool before placing in the fridge.
4. This will easily keep for a couple of weeks before the ‘big day’ on 25th.
I like mine sharp, so keep the sugar content low. You may wish to add more, depending on your own personal preference.

Quark Winterberry Wobbly Cheesecake

I was invited to take part in a Mistletoe and Quark food blogger challenge to come up with a recipe using the Lake District Dairy Co. Quark.  Originally I intended to make a cheesecake but the final outcome is more like a pannecotta; with that hint of a wobble (a bit like my thighs, some may say!) and one which I’m very pleased with too.

As a lover of things tart and not too sweet, this is what I created:

150g Digestive biscuits
10ml Ground Cinnamon
90g   Butter
4       Gelatine leaves
60ml Orange juice
200g Light Philadephia
500g Quark
200g Icing sugar
5ml   Nielsen Massey Vanilla bean paste
250g Cranberries
1       Orange, grated zest and juice
75g   Caster sugar

1. Line a 20cm/8″ spring form tin with baking parchment.
2. Crush the Digestive biscuits and add the ground cinnamon.
3. Melt the butter, pour onto the biscuits and cinnamon then mix thoroughly.
4. Tip the biscuit and butter mix into your prepared tin and press well down into an even layer.
5. Place into the ‘fridge to chill.
6. Place the gelatine leaves in a bowl of cold water for 5-6 minutes until softened.
7. Heat the orange juice in a small saucepan until warm.
8. Squeeze the water from the gelatine leaves and add to the warmed orange juice, then heat together gently until the gelatine has dissolved.  Remove from the heat and leave to cool for 5 minutes.
9. In a large bowl, whisk together the Philadelphia cheese, Quark, icing sugar and vanilla bean paste.
10. Gradually pour in the orange juice and gelatine mixture in a slow stream whilst continuing to whisk until combined.
11. Pour this Quark mixture over the chilled biscuit base, smooth the top and leave in the ‘fridge to set overnight.
12. In a saucepan, place the cranberries, orange zest and juice with the sugar.
13. Bring to the boil then continue to cook on a simmer for 15-20 minutes until the cranberries have burst and the mixture is thick.
14. Pour this cranberry sauce into a bowl, cover and leave until cold.
15. Remove the cheesecake from the ‘fridge and pour over the cranberry sauce, spreading out to an even layer.

Serve chilled and enjoy the sharpness of my wobble!

I was sent a box of chilled Quark with which to create my low fat, tasty seasonal dessert to enable me to take part in the Food Blogger Challenge.  

Cranberry, Blueberry & Chocolate Flapjacks

After watching Nigel Slater making flapjacks on TV this evening whilst making dinner, it put me in the frame of mind to make some myself.  This one uses my basic flapjack recipe with added fruit and a treat of hidden chocolate.

175g Butter
175g Molasses sugar
125g Golden syrup
350g Porridge oats
200g Cranberry and Blueberry mix
100g Dark chocolate drops

1. Preheat your oven to 180˚C.
2. Heat the butter, sugar and golden syrup together until the sugar has melted.
3. Mix in the porridge oats until thoroughly coated.
4. Stir in the cranberries, blueberries and chocolate.
5. Pour into a lined baking tin, 30cm x 20cm.

6. Bake for 30 minutes.
7. Cool in the tin for 10 minutes then remove to a cooling rack.

8. Cool on the rack for a further 10 minutes, then mark into individual sized portions.
9. Cool completely then cut into individual pieces.
